With the convection oven radiants in the IBEX Oven, you can achieve cooking temperatures above 500ºF (260ºC).
The IBEX Oven cooks food using RF electromagnetic waves that excite water molecules in food, which generates heat quickly. Frequencies of RF are lower than microwaves, so they can penetrate denser and thicker foods more uniformly. This prevents the hot spots or under-cooked portions often associated with microwave cooking. The IBEX sensors refine the cooking signal to match the food being cooked even more precisely to optimize the cooking performance per item.
In combination with convection radiant heat capability, the IBEX Oven provides control of desirable textures and finishing of dishes like browning and crisping. Testing your items and recording the recipe that produces the perfect outcome is recommended to ensure repeatable results every time at the push of a button.
